Turkey Pitas with Greek Sauce
Number of Servings: 4

Ingredients
16 ounces of 93 percent lean ground turkey
1/2 teaspoon of cumin
1 teaspoon of dried parsley
1 teaspoon of dried oregano
1/2 teaspoon of onion powder
1 cup of plain lowfat or nonfat yogurt
1/2 cup of cucumber, peeled and finely chopped
1 clove of garlic, minced
1 ounce of lemon juice
2 tablespoons of fresh parsley, chopped
Lettuce
Tomato
Cucumber

Instructions
1. In medium mixing bowl, mix turkey, cumin, dried parsley, oregano, and onion powder. Combine thoroughly and shape into eight patties, approximately 1/4 inch thick each.

2. In separate bowl, combine yogurt, cucumber, garlic, lemon juice, and fresh parsley. Mix thoroughly and refrigerate until ready to use. This will be your 'Greek sauce.'
3. Spray a large skillet with nonstick cooking spray and heat over medium high heat. Cook turkey patties until browned and cooked through, turning once.
4. Serve each patty in half a pita with lettuce, tomato, cucumber, and two tablespoons of Greek sauce.
